Creamy Summer Zucchini Soup

I always forget how much I love soup until I make it and ask myself why I don’t make it more often. Zucchinis also just happen to be one of my favorite vegetables. I know boring but hear me out, they don’t taste like much and absorb flavor so well that you can quite literally throw them in anything, and it will work.

What I also love about zucchinis are their cooling properties. In TCM (Traditional Chinese Medicine), zucchinis are used to cool the body down and lower inner heat/ inflammation. This makes this soup good for any weather. Soup in summer anyone?

What’s also great about this soup is it is so easy and quick to make and also tastes even greater if you cook it ahead of time and leave all the flavors to magnify.

Ingredients

1 medium to large zucchini

1/2 avocado

1 cup broth of your choice

1/2 TBS coconut aminos

1/4 tsp ginger ground or fresh

1/4 tsp coriander

1/4 tsp cumin

1/4 tsp pepper

1/4 tsp turmeric

1 tbs parsley dry or 1/4 cup fresh


To Make

Boil zucchini in water till soft.

Drain water.

Add all ingredients with zucchini to a blender and blend till smooth and creamy!

Serve and enjoy!
