Fluffy Cauliflower Fritters

Most of my recipes originate from lack of groceries. This was originally supposed to be zucchini fritters, but I had no zucchinis in my fridge so hence cauliflower. You can still make this with zucchini but I personally think the cauliflower just makes it a lot more fluffier.

I don’t know why I decided to make fritters because I don’t think I ever had fritters before or even cared for them but after making this, it has 100% become something that I do eat.

What I love about fritters is the easiness of making them and how versatile you can make it just by adjusting and switching around a couple ingredients. You can make any type of vegetable fritter, any shape of fritter and any flavor and it all just depends on what you want and feel like having.

Ingredients:

1 cup grated/ riced cauliflower*

2 TBS flour of your choice

1 egg + 2 egg whites

2 TBS water

pepper and salt to taste

optional: fennel, parsley, coriander ( any spice and herb you want, turmeric and cumin are great here too!)

*for zucchini fritters: grate 1 medium zucchini and squeeze out water with a cheese cloth.

To make:

Throw all ingredients in a bowl and mix.

You have the choice to either cook on a pan or do what I did and put it in a mini waffle maker !

Serve them up with some greens, eggs, yogurt, sour cream, cucumber.. whatever your soul desires and bon appétit !
