Single Serve Quiche
I don’t think I ever had quiche in my life and have absolutely no clue as to why I thought ... ‘let’s make quiche today’.
When I say this was so easy to make, I mean it literally took 20 mins max and that’s just because I was struggling to find a pan to put it in.
Now that I’ve made it, quiches are so fun to make because 1) you can play around with the flavor as much as you want and 2) it’s so quick and easy to make.
Most quiche recipes have way too many steps to comprehend and if you know by now, that is just not going to do for me. So, I give you this simple recipe that I guarantee you most definitely have the ingredients for in your cupboard/ fridge.
On another note, this is great if you have any gut issues because it is gluten free and paleo, could possibly be vegan if you sub the egg for vegan egg, vegan yogurt, a lentil/bean blend with some liquid and spices or a plant-based milk with some sort of binder like psyllium husk/flax/chia.
Ingredients:
Dough (check my samboosa recipe)
2 eggs or 1/2 cup egg whites
1/2 cup chopped vegetables of your choice (suggestion: tomatoes, zucchini, peppers, mushroom, kale, spinach, leeks)
1 TBS herbs and spices of your choice (suggestion: parsley, basil, coriander, cumin)
salt + pepper
2 TBS cheese of choice (I used a vegan almond-based cheese)
To Make:
Follow dough recipe and method from samboosa recipe and stop after you roll the dough. Place the dough in a quiche pan or if you don’t have one... like me, you can use any oven safe dish that the dough will fit in.
Place dough in pan and mold the dough along the rim of the pan so that no liquid will spill out.
If rolling and placing the dough in the pan is difficult for you, you can always just mold it into the pan instead!
Place the dough in oven at 375 F for around 30 minutes and the bottom of the dough has cooked. Temperature and time may change deepening on your oven. Once the bottom has cooked remove from oven. Keep oven on.
For the filling, throw all rest of ingredients in a bowl (minus the cheese, unless you want the cheese in the filling) and whisk. Pour filling into the now cooked dough and place in oven. Let cook for 10 minutes and once the top has set, sprinkle cheese on top and allow to cook until cheese has melted, roughly 5 minutes. Allow to cool. You can garnish with some chives, parsley, more cheese or whatever else you want.
Cut into it and admire your work!
