Beet Fries

Okay so just like the rest of the world, I am a little obsessed with the air fryer. It took me a long time to get one, but I eventually caved in, and it was freaking worth it. It has probably become my tool to cook everything in, because it just cooks everything to perfection and in such a short time.

These beet fries are an example of just how great an air fryer is. They literally took 15 minutes. But don’t worry, if you don’t have an air fryer, I’ll tell you how to make them in an oven.

First let’s just talk about why beets are so good for you.

Beets contain nitrates which can improve and assist athletic performance, it is anti-inflammatory, is great for you heart health and it is also just super delicious!

So now let’s just get into the process.

What you need:

1 beet

1/2 TBS olive oil

salt + pepper

thyme

To make:

Start by preheating oven to 375 F.

Peel and wash the beet and cut into fries.

In a bowl toss with rest of ingredients.

Line a tray with parchment paper and bake for 15- 30 minutes, depending on your oven.

If using an air fryer (which I highly recommend), set to fry for 15 minutes at 400F.

Pair with ketchup, yogurt, hummus, tzatziki, guac... literally anything goes!
