Creamy Ginger Parsnip Soup

Every summer I always start to crave soup. I truly believe it is simply because I love Autumn and winter so it’s probably just my soul craving that time and wanting to feel like the weather is colder out.

Soup is also one of the easiest things you can make. It really is just boiling some veggies throwing them in a blender and adding some liquid, herbs and spices. At least that’s how I make my soups because the simpler the recipe and preparation the more appealing it is to me.

Like all my recipes I will always make sure that it is easy and delicious.

Ingredients:

1 Parsnip

1 cup cauliflower

2 TBS yogurt ( I used Harmless Harvest unsweetened plain yogurt)

1 to 2 cups vegetable broth or other broth of choice (Depending on consistency you prefer)

Thumb size fresh ginger

Herbs + Spices: cumin, salt, pepper, ground coriander

 

Method:

Peel parsnip. Cut into smaller pieces.

Boil cauliflower and parsnip.

Throw all ingredients in blender. Add as much liquid to your preference of consistency.

Serve with fresh herbs, bread, sandwich…. Whatever makes you feel good!
