AIP Friendly Creamy “Oats”

Dealing with different gut issues has led me to be very experimental with my recipes.

When I decided to remove grains from my diet to test out what that would do for me, the thing I was most worried about was my daily oat bowl.

I was determined to find a way to still have oats and have it be just as sastisfying and I DID GOOD!
Many of the “oat free” oat recipes online are super dense with nuts and seeds.

This is the grain free, paleo, AIP oat recipe that you have been looking for because not only is the texture on point, it does not neglect the reason why we love our morning bowl of healthy carbs.

… and in all honesty I now like this more than oats.

Recipe:

1 TBS Pysillium Husk

1/2 Medium Roasted Sweet Potato ( I like using Japanese sweet potato or purple Okinawa sweet potato)

*1 Serving Protein Powder of Choice (I use Nuzest or Sprout Living all natural pea protein)

Optional Spices: Cardamom, Cinnamon, Turmeric, Ginger, Pumpkin Spice…

To make:

Add pysillium husk and spices to bowl and cover with water.

Let sit until it absorbs water.

Mash sweet potato in bowl with pysillium husk.

Add protein powder and mash together with water until you reach your preferred consistency.

Serve as you please ! I love adding coconut yogurt, seeds and pollen!

*If you don’t want or don’t have a protein powder, you can add in 2 TBS of either flax meal or chia seeds to get a more balanced meal and oaty texture!
