Carrot Bread

I used to love watching ‘Chopped’ when I was younger and would come up with so many different things if I were given one of those mystery baskets. Every time I open my fridge, I look at it with that same mindset, What new things can I put together to create a fun new recipe?

I had a carrot and wanted to make bread so I thought why not put those two things together and make a carrot bread.

This recipe is simple, easy and pretty.

Ingredients:

2 TBS Coconut flour

1 TBS Flaxmeal

1 Carrot

Optional: salt, pepper, herbs and spices of your choice (I would suggest thyme, oregano, cumin, parsley)

To make:

Boil Carrot until soft.

In a blender add all ingredients till dough forms.

Shape into toast or anything you want… you could make this a bagel!

Top with whatever you desire, avocado, pesto, cream cheese, yogurt… so many options !
