Paleo + Vegan Cinnamon Rolls

I have been thinking about ‘Cinnabon’ for weeks and have been meaning to make my own but was quickly overwhelmed by all the ingredients and prep time.

Being the person I am, I was determined to find a recipe that would

  1. Be easy

  2. Require little time

This recipe is inspired by @healmedelicious with my easier take on it !

What you’ll need:

Dough:

1 medium sweet potato

4- 5 TBS cassava flour

Filling:

1 TBS coconut yogurt

1 TBS cinnamon

Topping:

coconut yogurt

To make:

Peel and boil sweet potato.

Mash sweet potato or put in food processor and mix with cassava. Add more or less to reach dough consistency.

Roll out dough into a rectangle.

Mix coconut yogurt with cinnamon and spread across dough.

Fold/ roll dough up into a log.

Cut your rolls and place in a greased pan.

Bake at 350 degrees for 25 minutes or until golden.

Top with coconut yogurt once out of the oven and try to let them cool down before you demolish them!
