Creamy Broccoli Pasta Salad

When it’s too hot to eat pasta but you want the pasta. I love this recipe because it is so easy and so good, full of nutritious carbs, fats and protein. I love using lentil pasta because it is protein and fiber rich as well as it doesn’t raise blood sugar as much. This is a perfect meal for your follicular phase and will give you the good energy to fuel you and keep you satiated!

Ingredients:

1 cup uncooked pasta of your choice

1 cup broccoli

Handful of mixed greens of your choice

3 TBS chopped olives

Half an avocado

1 TBS hempseed 

Dressing:

1 TBS apple cider vinegar

1 TBS yogurt of your choice ( I use kitehill unsweetened plain yogurt)

lemon squeeze

salt + pepper to taste

Directions:

Cook pasta according to box/ your preference. 

Boil broccoli. 

Throw all ingredients in a bowl without dressing.

Mix dressing in a separate bowl or in a small jar and toss it or massage it into the salad.
