Easy 2 Ingredient Bread (Paleo +Vegan)

One quarantine day while stuck at home I was really craving a good sandwich. I opened the fridge for some bread but nothing. But wait let me check the freezer. Nothing. I was left to my own devices. I could either have something else or get creative with the few ingredients in my pantry and make bread. And so, I did and thus this amazing and SUPER easy bread was invented.

I love this recipe because it is so versatile and can be used in many ways, in different recipes, meals and more and more. I make this at least once a week and I am sure once you make this, it will be a regular.

To be honest I’m not much of a bread person, it’s funny because I used to be the biggest bread person. It is kind of why I didn’t have bread in my fridge to start with. When you can make your own bread with just 2 simple ingredients, you’ll probably never buy bread again just so it can go “bad” in your fridge, or stale on the counter or just annoying to take out from the freezer, wait for it to defrost…

Anyways you get the point. This bread is also a life saver for anyone who has a gluten issue, grain issue, GI issue, is vegan, paleo, soy free… you name it.

So, let’s just get to it. Here is the amazing recipe

Ingredients:

1/4 cup coconut flour

1/4 tsp baking powder

1 TBS psyllium husk

1/2 tsp apple cider vinegar

1/2 cup water (plus more on the side incase)

optional flavors:

  • pizza: 1 TBS Italian spice mix

  • cinnamon raisin: 1/2 tsp cinnamon + 1 TBS raisins

  • garlic/ rosemary: 1/2 tsp garlic powder + 1/2 TBS rosemary

  • olive: 1 TBS chopped olives, 1/2 tsp oregano and /or 1/2 tsp thyme

Tip: for a more hearty and dense bread you can use half almond flour to have coconut flour ratio. 2 TBS almond and 2 TBS coconut or 1 TBS almond and 3 TBS coconut flour.
